It is a soft rinded cows milk cheese from the talented Rich Hodgson Isle of Wight Cheese Company who won 3* Gold at the Great Taste Awards for their blue.
When planning to serve, take it out of the refrigerator for a couple of hours before eating. This will allow the cheese to come to room temperature, and it will be irresistibly creamy and can be really enjoyed at its best.
The Isle of Wight Soft is a soft white surface mould ripened pasteurised cheese first made in 2006. It fits nicely in between the brie and camembert brackets. It is sold between 2-4 weeks of age and has a maximum 9 week shelf life. When young this cheese has a firm textured, sharp lactic flavour. As it ages the texture changes to a softer paste with the flavour becoming more familiar to the taste of camembert.
Slowly ripen this cheese in the fridge in a sealed box. Keep the cheese in its wrapper, but place in the box a slightly damp cloth which will maintain the humidity of the air inside. Lift the lid every day to allow in fresh air.

Try it with a glass of Pinot Noir or a dry sparkling white such as Champagne. Truly worthy of a separate course of its own at Dinner! Our favourite way to serve? Try it oven baked studded with IOW garlic and rosemary, and serve in a hollowed out small loaf of freshly baked crusty bread. The perfect beach Boxing Day lunch!
