Native to Middle Eastern countries, the bright red berries from sumac bushes have been dried and ground to give a coarse, tart red powder. Sumac spice is used in Middle Eastern and Mediterranean cookery featuring in Turkish dishes and Lebanese cuisine. Ground sumac is excellent for kebabs, spicing up your BBQs, pittas and in salads. Use in dry rubs, marinades and dressings. It has a very appealing lemon-lime tartness that can actually be widely used! In Iran, they use it as a condiment, putting it onto the table with salt and pepper.
